Probably it's that Emeril sucks.. but many many years ago, I had a problem with pudding that got super soupy. My mom said that if saliva had gotten into it, the spit-protein could break down the gelatinous properties. I never fact-checked this, but I'm always super careful not to lick a spoon and re-use it if I'm doing something that needs to set.

Not that I'm calling the crazy pregnant lady a dirty spoon-licker.. :-)

I wonder. I licked the spoon then put it straight into the dishwasher so it wouldn't be that, but there was a bit of spillage when I poured the sauce into the piecrust and I wiped that up with my finger. Hmmm. This is when I'd love to be smarter, then I could be a science geek and figure this out.
